Vegan Blueberry Toaster Streudel/Pop Tarts

Whatever you decide to call these, they are divine!
Did you know that most store bought puff pastry dough is accidentally vegan? I know I didn't. I saw someone make these a few weeks ago and was inspired to try my own.
You will need...
1 box frozen puff pastry thawed (or make your own vegan recipe for puff pastry)
1/2 cup organic powdered cane sugar
3TBS Oatmilk I used plain
2TBS maple syrup
Filling Ingredients: 1 pint blueberries 1/3 cup organic blue agave 1tsp vanilla 1TBS water
Makes 6 Pastries
Directions: Bring all ingredients to a boil in a medium sauce pan. Reduce to a simmer and cook for 30 minutes or until it becomes thick like jam, stirring occassionally. Set aside and allow to cool slightly.
Preheat oven to 375 degrees F.
Line a baking sheet with parchment paper.
Open up the sheets of thawed pastry and cut each sheet into 6 even pieces.
Place half of the sheets onto the baking sheet and spoon filling evenly on each. Leaving a border.
Mix together 2 TBS oatmilk and maple syrup to make an ”egg wash” and brush the edges of each pastry. Top with the remaining pastry and use a fork to secure the edges. Brush the tops of each with the remaining wash and bake for 20-25 minutes. Allow to cool.
Whisk together the remaining oatmilk and powdered sugar to create a frosting. Adding more of each if needed to reach your desired consistency. I mixed in a small amount of the blueberry filling to mine for color. Enjoy!
